I’ve been getting a lot of flak the last couple of weeks from pastry students who want me to list more mixing methods in the “Baking Basics” section. It must be finals time or something. I’ll admit my Mixing Methods list isn’t exhaustive, though it does contain the five methods that home bakers use the most. Still, in the interest of education I should probably be thorough. If you’ll bear with me for a few quick posts…

    1. So far so good, Anne! We’ve made biscuits and corn muffins so far, with great success. In fact the take- home goodies have resulted in several requests for an adult class. Tomorrow I think we’ll switch things up and do some coconut macaroons.
