Here’s one that will barely fill a day — much less and entire week — of my usual nonsense. But hey, a request is a request! Focaccia is an area of baking into which I fear to tread for the same reason I feared to tread into biscuits and pie. Simply, because there are so many different versions of it, so many one way‘s to do it, I’m bound to mess it up from somebody’s point of view. The thing is though, there’s an awful lot of bad focaccia out there (dense, dry, stale, or just too darn oily), that I’d rather try than not. I’ll do my best to indicate the points of possible variation as I go along, so if you don’t like what I do, you can change it. Onward now to certain death!
