Cut up your fruit, toss it in sugar to coat, add in a little cinnamon, sprinkle over a spoonful of corn starch (maybe even a splash of almond or vanilla extract) and cover the whole shootin’ match with biscuit dough. Bake for an hour at 375 and you’re ready for the ice cream. Me, I like doing my cobbler in a cast iron skillet since it gives me that good ol’ frontier feeling (though as the wife will gladly tell you, I can’t even stand to camp out). As you can see I whipped it together pretty fast…and had you-know-what for lunch. Extra laps for me at the gym this evening.
