Harshing Your Mallow, Vegetarian Style
Several readers have written in asking if there’s a way to get a good, stiff peep-worthy marshmallow without the use of gelatin. The answer is yes, 3/4 teaspoon of agar agar should do the trick!

I found some agar-agar powder in an Oriental Market in town. I found a recipe for a doughnut glaze that calls for using agar-agar powder. 🙂 🙂 Now to make the doughnuts!! 🙂 🙂
Have you tried this? I’m wondering what your success rate with achieving a foam has been. I’ve tried it a few times with different amounts of agar-agar and have not yet had any success.
Hey, Bri! I confess I have not personally. However I’ve known a couple of committed vegetarians who’ve done it. If the agar-agar is interfering with the development of the foam, I wonder if it needs to go in after the foam gets going. Hm.
Thanks for the email!
